My kiddos and I made these adorable Easter Egg Sugar Cookie Baskets the other day. They were so easy to make and decorate. My son did most of the work himself!
What You Need:
- Sugar Cookie Dough, we used the ready-made kind in the tube and it worked just fine
- Coconut
- Green Food Coloring
- Chocolate Easter Eggs or Jellybeans
- Sour Punch Straws or Rainbow Airheads for the handle
- A mini muffin pan
- Pam spray or something to grease the pan
What You Do:
Make sure you grease your pan, even if you think it is nonstick! It makes it so much easier to get the baskets out of the pan. Roll the sugar cookie dough into balls and press into the bottom and up the sides of the muffin pan.
Bake for about 9 minutes or until golden brown. The cookies will puff up a little bit as they cook. Remove the pan from the oven and use the end of a wooden spoon to press into the middle of the cookie and up the sides to make the basket shape.
Allow them to cool in the pan. Meanwhile, use your green food coloring to color your coconut.
When the cookies cool use a knife to pop them out of the muffin pan.
Fill each basket with the green coconut.
Cut each straw or airhead short enough to make the handle, you can use a little icing to hold the handle in place but I didn't need to. Decorate with your eggs or jellybeans on top of the "grass" and enjoy!
