Chocolate Mint Birthday Cake

Everyone in our family loves this cake, so we thought we would share it with you! It's great alone or served with a little vanilla ice cream. We hope you enjoy it as much as we do.

Chocolate Cake


What You'll Need 
  • 1/2 cup shortening
  • 1/2 cup boiling water
  • 1 egg
  • 1 cup sugar                       
  • 1/2 cup milk                                            
  • 1 teaspoon vanilla                                 
  • 1-1/2 cup flour
  • 1/2 cup unsweetened cocoa
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
What You'll Do 
  1. Pre-heat oven to 350.
  2. Grease 8x8 pan and set aside.
  3. Combine shortening and water in mixer at low speed.
  4. Turn the mixer up to medium and beat in sugar and egg. 
  5. Add milk and vanilla and mix until combined.
  6. Add the flour, salt, soda, and cocoa and mix at medium speed for 2 minutes. 
  7. Pour into prepared pan and bake for 25 minutes or until a toothpick inserted in the center comes out clean. 
  8. Place the pan on a wire rack to cool for 10 minutes.
  9. Remove the cake from the pan and cool on the wire rack until completely cool, then frost with white mint frosting (recipe follows).

White Mint Frosting

What You'll Need
  • 4 tablespoons shortening
  • 4 tablespoons milk
  • 16 oz package confectioners sugar
  • 1/4 tsp peppermint extract
  • 1 heaping tablespoon marshmallow creme
  • Colored nonpareils (if desired)

What You'll Do 
  1. Beat the shortening and sugar together in a mixer at medium speed.
  2. Add the peppermint and milk to make a smooth frosting.
  3. Mix in marshmallow creme until combined.
  4. Frost cake and, if using, sprinkle the colored nonpareils on top.
