Rosemary & Garlic Roasted Potatoes

These are so simple, but taste like they came from a 5-star restaurant. The flavor comes from the fresh-chopped rosemary and garlic.

Ingredients

  • 1 1/2 pound bag of small red potatoes
  • 1/8 - 1/4 cup of olive oil
  • kosher salt and black pepper to taste
  • 2-3 garlic cloves minced
  • 2-3 stems of fresh rosemary, chopped and minced (use a knife to cut the green off of the wooden stems and then mince the green part)

Instructions

  1. Mix the oil, salt, pepper, garlic, and rosemary in a bowl.
  2. Cut the potatoes in quarters and then toss in the mixture until well-coated.
  3. Pour in an even layer on a roasting pan and roast at 400 degrees for an hour. 

For even browning, you can flip during cooking. I never do because I like the brown edges that are crispy. 

These are delicious as a side dish, or if you are like me, I just make a big bowl of these and that is all I need. Enjoy!
